Ingredients
- 1 block extra-firm tofu, pressed and cubed
- 2 tablespoons Cool Runnings Jerk seasoning
- 2 tablespoons Mekong premium soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 teaspoon Cool Runnings dried thyme
- 1 teaspoon Cool Runnings ground allspice
- 1 teaspoon Cool Runnings garlic powder
- 1 teaspoon Cool Runnings onion powder
- 1/2 teaspoon Cool Runnings cayenne pepper
- Salt and pepper to taste
- Fresh lime wedges for serving
Directions
1. Press the tofu to remove excess water, then cut it into cubes.
2. In a bowl, whisk together the Caribbean jerk seasoning, soy sauce, maple syrup, olive oil, thyme, allspice, garlic powder, onion powder, cayenne pepper, salt, and pepper.
3. Place the tofu cubes in a shallow dish and pour the marinade over them. Ensure each piece is well-coated. Let it marinate for at least 30 minutes, or for more flavor, marinate it in the refrigerator for a few hours or overnight.
4. Preheat your oven to 400°F (200°C). Place the marinated tofu cubes on a lined baking sheet. Bake in the preheated oven for 25-30 minutes or until the edges are golden and crisp, flipping the tofu halfway through for even cooking.
5. Once done, remove from the oven and let it cool for a few minutes. Squeeze fresh lime juice over the tofu cubes before serving.
6. Serve the Caribbean Jerk Tofu over rice, in tacos, or as part of a vibrant salad. Garnish with extra lime wedges and fresh herbs if desired.
