cool runnings

Servings: 4 | Preparation time: 1 hour | Cooking time: 10 minutes

Ingredients

Directions
1. Press tofu for 30 minutes to remove excess moisture, then tear into uneven bite-sized pieces.

2. Add tofu to a bowl and pour in vegetable broth, BBQ seasoning, and poultry seasoning. Mix well and let marinate for 30 minutes until the liquid is absorbed.

3. Sprinkle cornstarch over the tofu and toss to coat evenly. Start with 1 tablespoon and add more if needed.

4. Heat oil in a pan over medium-high heat. Add tofu and cook for 4 to 8 minutes, turning occasionally until golden and crisp on all sides.

5. Remove tofu from the pan or keep it in the same pan. Add BBQ sauce and jerk seasoning, mixing well to coat. Let it sit for 2 to 3 minutes so the sauce absorbs into the tofu.

6. Serve hot with rice and peas.
