Ingredients
- 5 cups vegetable broth
- 2 tsp canola oil
- 2 medium onions, chopped
- 3 garlic cloves, minced
- 2 tsp of Cool Runnings ginger powder
- 1 tsp of Cool Runnings coriander whole
- 1 tsp of Cool Runnings ground turmeric
- 1/2 tspof Cool Runnings thyme leaf
- 1/4 tsp of Cool Runnings all natural all purpose seasoning
- 2 cups sweet potato, peeled and cubed
- 3 cups fresh kale, chopped
- 1 cup frozen sliced okra
- 1 cup canned diced tomatoes, drained
- 1 cup canned black-eyed peas, rinsed and drained
- 1 cup of Cool Runnings coconut milk
- 2 tbsp of lime juice




Directions
1. In a large pot, heat canola oil over medium heat. Add chopped onions and sauté until tender, about 5 minutes. Stir in garlic, Cool Runnings ginger powder, coriander, turmeric, thyme, and all natural all purpose seasoning. Cook for 1 minute until fragrant.
2. Add the vegetable broth and sweet potatoes. Bring to a boil, then reduce heat, cover, and simmer for 5 minutes.
3. Stir in chopped kale and frozen okra. Return to a boil, then cover and simmer for another 10 minutes, or until the sweet potatoes are tender.
4. Stir in the coconut milk, diced tomatoes, black-eyed peas, and lime juice. Cook until heated through.
