Ingredients
- 2 cups grated fresh coconut (or unsweetened shredded coconut)
- 1 ½ cups British Class brown sugar
- 1 tsp Cool Runnings vanilla flavoring
- 1 tsp Cool Runnings ginger powder
- ½ tsp Cool Runnings ground cinnamon
- ½ cup water
- ½ cup shredded coconut, for coating




Directions
1. In a large saucepan, combine the grated coconut, brown sugar, ginger powder, cinnamon, vanilla, and water. Stir well to mix everything together.
2. Place the pan over medium heat. Let the mixture simmer, stirring often, until it thickens and becomes sticky—about 10 to 15 minutes. Watch closely near the end to avoid burning.
3. Once thick and sticky, remove from heat and let it cool slightly until safe to handle.
4. Lightly grease your hands, then scoop and roll small portions (about 1 inch wide) into balls.
5. Roll each ball in the shredded coconut to coat completely.
6. Place the finished coconut balls on a tray lined with parchment paper and let them cool fully before serving or storing.
