Ingredients
- 1 lb whole shrimp with heads on
- 2 Scotch bonnet peppers, diced
- 1 medium onion, diced
- 1 garlic clove, diced
- 2 stalks scallion, diced
- 1 sprig thyme, leaves removed from stem
- 1/2 tsp salt
- 1 tsp paprika or annatto (for colour)
- 1 tsp of Cool Runnings all purpose seasoning
- 1 tsp of Cool Runnings seafood seasoning
- 1/4 cup vinegar
- 1/2 cup water
- Red food colouring (optional, a few drops)
- Lemon wedges for garnish
- 1–2 tbsp cooking oil
Directions
1. In a large bowl, combine the shrimp with the diced Scotch bonnet peppers, garlic, scallion, thyme leaves, paprika, all purpose seasoning, seafood seasoning, and a little cooking oil. Mix well to coat and let the shrimp marinate for about 30 minutes.
2. Heat a skillet over medium-high heat and add a little cooking oil. Once hot, add the marinated shrimp along with all the aromatics. Cook for 3–4 minutes, stirring occasionally, until the shrimp begin to turn pink and firm up, and the aromatics are soft, fragrant, and releasing their flavours.
3. Pour in the vinegar (and optional red food colouring) and continue to cook for another 2–3 minutes, tossing to coat the shrimp in the spicy sauce, until fully cooked.
4. Remove from heat and serve immediately with lemon wedges on the side.
