Corned Beef Balls

Servings: 6 | Preparation time: 15 minutes | Cooking time: 5-7 minutes

Ingredients
  • 1 egg
  • 1 cup of Cool Runnings corned beef
  • ¼ cup of chopped onions
  • 1 tbsp chopped celery
  • ½ cup cooked, mashed potato
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup dry breadcrumbs
  • 1 cup vegetable oil for deep frying

Directions
1. In a bowl, lightly beat the egg and set aside.

2. In another bowl, combine the corned beef, chopped onion, celery, mashed potato, salt, and pepper. Mix well.

3. Form the mixture into small balls. Dip each ball into the beaten egg, then coat with breadcrumbs.

Heat oil for deep-frying over medium heat. Once hot, carefully add the corned beef balls in batches and fry for 5 to 7 minutes, or until nicely browned and heated through.

5. Remove and drain on paper towel.

6. Serve hot and enjoy!
