- 1 egg
- 1 cup of Cool Runnings corned beef
- ¼ cup of chopped onions
- 1 tbsp. chopped celery
- ½ cup cooked, mashed potato
- ½ tsp. salt
- ½ tsp. pepper
- ¼ cup dry breadcrumbs
- 1 cup vegetable oil for deep frying
1. In a bowl, beat egg lightly
2. In another bowl, combine the corned beef, onion, celery, potato, salt and pepper.
3. Form into small balls; dip in beaten egg and coat with breadcrumbs.
4. Deep-fry until nicely brown; drain on paper towel. Serve and enjoy!
