Ingredients
- 2 cups cooked jasmine or long-grain rice (preferably chilled or leftover)
- 1/2 lb large shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, and corn)
- 3 tbsp Mekong premium soy sauce
- 2 tbsp vegetable oil
- 1 tbsp Cool Runnings Jerk seasoning spice
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 3 scallions, chopped
- Salt and black pepper to taste


Directions
1. Marinate shrimp with Cool Runnings Jerk Seasoning for 15–20 minutes.
2. Heat 1 tbsp oil in a wok over medium-high heat. Cook shrimp 2–3 minutes per side until pink. Remove and set aside.
3. In the same pan, scramble eggs and set aside.
4. Add more oil if needed. Stir-fry garlic, ginger, and vegetables until tender-crisp.
5. Add rice, breaking up clumps. Stir in shrimp, eggs, soy sauce, and scallions. Toss until combined and heated through.
6. Season with salt and pepper. Serve hot and enjoy!
