Spicy Vegetable Fried Rice

1. Prepare rice according to instructions from the package. (Stove: Bring 4 cups of water to a boil. Add 2 cup of rice, stir and cover. Reduce heat and simmer for 12 minutes or until all water is absorbed. Let stand covered for 5 minutes.)

2. Heat oil in an extra-large frying pan.

3. Sauté frozen broccoli, brussels sprouts, sweet corn, green pigeon peas, and mushrooms for 10-15 minutes on medium heat.

4. Stir in scallions (green onions) and cook for an additional 1-2 minutes. 

5.  Spread cooked rice over the vegetables in the pan.

6. Add Cool Runnings Sweet Mango Pepper Sauce and Habanero Pepper Sauce evenly over rice. Carefully stir to fully combine. 

7. Season with salt and pepper to taste. Serve and enjoy!
