Ingredients
- 4 fish grenadier fillets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup okra, trimmed and halved
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 lemon, sliced
- 1 tablespoon Cool Runnings Cajun seasoning
- Salt and pepper to taste
Directions
1. Preheat your oven to 375°F.
2. In a large mixing bowl, toss together red bell pepper, yellow bell pepper, red onion, okra, and minced garlic. Drizzle with olive oil and season with Cool Runnings Cajun Seasoning, salt, and pepper. Mix until the vegetables are evenly coated.
3. Place the fish grenadier fillets on a baking sheet lined with parchment paper. Arrange the seasoned vegetables around the fillets. Place lemon slices on top of each fillet for extra flavor.
4. Bake in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.
5. Remove from the oven, garnish with fresh chopped parsley, and serve hot.
