Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons British Class baking powder
- 1/4 teaspoon salt
- 1 ripe banana, mashed
- 3/4 cup milk
- 1 egg
- 1 tablespoon vegetable oil (plus more for cooking)
- 1 teaspoon Cool Runnings Banana flvoring
- Optional: butter and syrup for serving


Directions
1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. In another bowl, mash the banana, then add the milk, egg, oil, and banana extract. Mix until combined.
3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; the batter should be slightly lumpy..
4. Heat a lightly oiled pan or griddle over medium heat.
5. Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
6. Flip and cook for another 1–2 minutes or until golden brown and cooked through.
7. Serve warm with your choice of syrup, butter, or sliced bananas.
