Cajun Fried Rice

Serves: 4 | Preparation time: 10 minutes | Cooking time: 15 minutes

Ingredients
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 1 lb large shrimp, peeled and deveined
  • 1 smoked sausage link, sliced (about 1 cup)
  • 1 small onion, finely diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 3 cups cooked rice (preferably day-old, cold)
  • 1 ½ tablespoons Cool Runnings Cajun Seasoning
  • 1 tablespoon Mekong premium soy sauce
  • 2 green onions, chopped (optional for garnish)

Directions
1. Heat 1 tablespoon of oil in a large pan over medium heat. Add the eggs and scramble until fully cooked. Remove from pan and set aside.

2. Add remaining oil to the same pan. Cook shrimp for 2–3 minutes until pink and just cooked. Remove and set aside.

3. In the same pan, sauté smoked sausage until browned. Add diced onions and bell peppers and cook until softened.

4. Add the cooked rice to the pan. Stir to combine with the vegetables and sausage.

5. Sprinkle in Cool Runnings Cajun Fried Rice Seasoning and soy sauce. Mix well to coat everything evenly.

6. Add back the scrambled eggs and cooked shrimp. Stir gently and cook for another 2 minutes until heated through.

7. Garnish with chopped green onions if desired. Serve hot.
