Ingredients
- 1 lb large shrimp, deveined (shell on preferred)
- 12 oz smoked sausage, sliced into rounds
- 1 lb baby potatoes
- 3 ears corn, cut into halves or thirds
- 1 small onion, quartered
- 4 cloves garlic, smashed
- 4 tbsp butter
- 2 tbsp Cool Runnings Cajun seasoning
- 1 tbsp Cool Runnings garlic powder
- 1 tsp Cool Runnings crushed chili(adjust to taste)
- 1 tsp paprika (optional for extra colour)
- 1 tbsp lemon juice
- Salt to taste
- Water (enough to fill a large pot)
- Lemon wedges (optional for serving)
Directions
1. Fill a large pot with water, add salt, onion, and garlic, and bring to a boil over high heat.
2. Add the baby potatoes and cook for about 10–12 minutes until they begin to soften.
3. Add the corn and sausage to the pot and continue cooking for another 5–7 minutes.
4. Add the shrimp and cook for 2–3 minutes until they turn pink and are fully cooked.
5. Drain everything well and transfer to a large bowl or tray.
6. In a small saucepan, melt the butter over medium heat. Stir in Cajun seasoning, garlic powder, crushed red pepper, paprika, and lemon juice. Let it simmer for 1–2 minutes.
7. Pour the seasoned butter over the seafood boil and toss everything until well coated. Taste and adjust seasoning if needed.
8. Serve hot with lemon wedges and sprinkle with parsley if desired.
