Ingredients
- 2 cups all purpose flour
- ⅓ cup cocoa powder
- 2 cups granulated sugar
- ½ cup margarine, softened
- ¼ tsp. salt
- 1 cup evaporated milk
- 3 eggs
- 1½ tsp. British Class baking soda
- ½ tsp. British Class baking powder
- 1 tsp. Cool Runnings vanilla flavoring
- chopped nuts and cherries for decoration
- chocolate butter frosting, for filling and frosting
Directions
1. Preheat oven to 350°F (175°C). Grease two 8 inch round cake pans and set aside.
2. In one large mixing bowl, combine the flour, cocoa powder, sugar, softened margarine, salt and ½ cup of the evaporated milk. Beat for 15 minutes until well combined and smooth.
3. Add the eggs, baking soda, baking powder, vanilla and the remaining ½ cup evaporated milk. Beat for another 5 minutes until the batter is smooth and evenly mixed.
4. Divide the batter evenly between the prepared cake pans. Bake at 350°F for 35 to 40 minutes, or until a toothpick inserted into the centre of each cake comes out clean.
5. Let the cakes cool in the pans for 5 minutes, then carefully remove them from the pans and transfer to a cooling rack. Allow them to cool completely before frosting.
6. Place one cake layer on a serving plate. Spread with chocolate butter frosting, then place the second layer on top. Frost the top and sides of the cake.
7. Decorate with chopped nuts and cherries.
