Ingredients
- 1 can (340g) Cool Runnings corned beef
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 2 tablespoons cooking oil
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 teaspoon British Class baking powder
- 1/2 teaspoon salt
- Water (to form a stiff dough)
Directions
1. In a pan, heat cooking oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and bell pepper. Cook until the bell pepper is slightly softened.
2. Stir in chopped tomatoes, thyme, paprika, salt, and pepper. Cook until the tomatoes release their juices and the mixture becomes fragrant. Add the corned beef to the pan, breaking it apart with a spoon. Mix well with the vegetables and spices.
3. Cook the corned beef mixture for about 10-15 minutes, stirring occasionally, until it's heated through and well combined with other ingredients.
4. In a mixing bowl, combine all-purpose flour, baking powder, and salt. Gradually add water to the flour mixture, stirring until a stiff dough forms.
5. Knead the dough on a floured surface until smooth. Pinch off small portions of the dough and roll them into small balls.
6. Drop the dumplings into a pot of boiling water. Cook for about 10-15 minutes or until they float to the surface and are cooked through.
7. Serve the dumplings with the corned beef and enjoy!
