Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into chunks
- 1/4 cup Cool Runnings Jamaican Jerk Seasoning
- 3 tablespoons olive oil
- 2 tablespoons Mekong premium soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Juice of 1 lime
- Wooden skewers, soaked in water
Directions
1. In a bowl, mix Cool Runnings Jamaican Jerk Seasoning, olive oil, soy sauce, honey, minced garlic, grated ginger, and lime juice to create the marinade.
2. Add the chicken chunks to the marinade, making sure each piece is well-coated. Cover the bowl and refrigerate for at least 1-2 hours, or overnight for best results.
3. Preheat your grill or grill pan on medium-high heat. Thread marinated chicken chunks onto the soaked wooden skewers.
4. Grill the skewers for about 6-8 minutes per side, or until the chicken is fully cooked and has a nice char. Optionally, baste the skewers with any leftover marinade during grilling for added flavor.
5. Once done, remove the skewers from the grill and let them rest for a few minutes. Serve the Jamaican Jerk Chicken Skewers with a side of rice and beans, and enjoy the flavorful, spicy goodness!
