Ingredients
- 1 cup fine yellow cornmeal
- 2 cups water (for mixing the cornmeal)
- 2 ½ cups water (for cooking)
- 1 cup Cool Runnings coconut milk
- 1 Cool Runnings cinnamon stick
- ¼ tsp Cool Runnings nutmeg ground
- 1 tsp Cool Runnings vanilla flavoring
- ¼ tsp salt
- 2 tbsp British Class golden sugar (or to taste)
- 2 tbsp Cool Runnings sweetened condensed milk (optional, for added creaminess and sweetness)





Directions
1. In a bowl, mix the fine yellow cornmeal with 2 cups of room temperature water. Stir until smooth to prevent lumps.
2. In a medium saucepan, bring 2 ½ cups of water and the cinnamon stick to a gentle boil.
3. Gradually whisk in the cornmeal mixture, stirring continuously to keep the porridge smooth.
4. Reduce the heat to low and stir in the coconut milk. Let simmer gently for about 10–15 minutes, stirring often to prevent sticking.
5. Add nutmeg, vanilla extract, salt, golden sugar, and sweetened condensed whitener (if using). Stir to combine and cook for another 3–5 minutes until thick and creamy.
6. Adjust consistency by adding more hot water or milk, a little at a time, if you prefer a thinner porridge. For a thicker texture, simmer a few extra minutes uncovered.
7. Remove the cinnamon stick before serving. Enjoy hot, optionally topped with fresh fruit, a drizzle of honey, or more cinnamon.
