Curry Roasted Cabbage Wedges

1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

2. Remove any loose outer cabbage leaves and cut the cabbage into 6–8 wedges, keeping the core intact so they stay together. Place the wedges on the baking sheet.

3. In a small bowl, mix together olive oil, curry powder, paprika, garlic powder, and onion powder.

4. Brush the curry mixture generously over both sides of each cabbage wedge. Roast for 30–35 minutes, flipping halfway through, until edges are golden, slightly crispy, and the cabbage is tender.

5. Remove from the oven and drizzle with fresh lemon juice while hot. Garnish with parsley or thyme if desired and serve immediately.
