Herb Crusted Fish

Servings: 2 | Preparation time: 15 minutes | Cooking time: 10 minutes

Ingredients
  • 2 white fish fillets (about 250g each)
  • ½ cup Cool Runnings complete herbs sauce, divided
  • ¼ cup panko breadcrumbs
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges, for serving

Directions
1. Pat the fish fillets dry with paper towels. Season lightly with salt and black pepper.

2. Place the fish in a bowl and coat with ⅓ cup of complete herbs sauce. Cover and marinate in the refrigerator for 10 to 15 minutes.

3. Preheat the oven to 400°F (200°C) and line a baking sheet with foil. Lightly brush the foil with olive oil.

4. In a small bowl, combine the panko breadcrumbs with the remaining 2 tbsp of Complete Herbs Sauce and mix until the breadcrumbs are evenly coated.

5. Remove the fish from the marinade, allowing any excess to drip off. Place the fillets on the prepared baking sheet.

6. Spoon the breadcrumb mixture evenly over the top of each fillet, gently pressing it down so it sticks.

7. Bake for 7 to 9 minutes, depending on the thickness of the fillets, until the fish is nearly cooked through and flakes easily with a fork.

8. Switch the oven to broil on high and broil for 1 to 2 minutes, watching closely, until the breadcrumb topping is golden and crispy.

9. Serve immediately with lemon wedges and your favourite sides.
