Ingredients
- 2 eggs
- 1 ½ cups unbleached all-purpose flour
- 1 cup sugar
- ½ cup unsalted butter, softened
- ¼ cup Cool Runnings strawberry jam
- 1 tsp British Class baking powder
- British Class icing sugar



Directions
1. Cream butter until smooth. Add sugar and beat until light and fluffy.
2. Add eggs and beat until smooth.
3. In a bowl, mix flour and baking powder. Add to the butter mixture and stir with a wooden spoon until a dough forms.
4. Shape into a ball, wrap in plastic, and chill for 40 minutes.
5. Preheat oven to 350°F. Line a baking sheet with parchment.
6. On a floured surface, roll dough and cut into shapes. Cut a small heart or circle from the center of half the cookies. Place all on the sheet, spaced apart.
7. Bake 8–10 minutes without browning. Cool completely. Spread jam on whole cookies, top with cutouts, and dust with icing sugar.
8. Serve and enjoy.
