Ingredients
- 2 boneless, skinless chicken breasts
- 2 tbsp Cool Runnings jerk seasoning spice
- 1 tbsp olive oil
- 1 ripe mango, peeled and diced
- 1 avocado, diced
- 1 cup mixed greens (spinach, arugula, or baby kale)
- 1/2 red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/4 cup toasted almonds or cashews
- 1/4 cup feta or goat cheese (optional)
- 3 tbsp olive oil
- 1 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tsp honey
- 1/2 tsp grated garlic
- Salt and pepper to taste

Directions
1. Preheat the grill or stovetop grill pan over medium-high heat.
2. Rub the chicken breasts with olive oil and season with Cool Runnings Jerk Seasoning, salt, and pepper.
3. Grill the chicken for about 6-7 minutes per side until fully cooked. Let it rest before slicing.
4. In a medium-sized mixing bowl, whisk together olive oil, lime juice, zest, honey, garlic, salt, and pepper until fully combined.
5. In a large bowl, combine mixed greens, mango, avocado, red onion, cucumber, and toasted nuts.
6. Drizzle the dressing over the salad and toss gently. Top with sliced jerk chicken and sprinkle with feta or goat cheese if desired and serve.
