Ingredients
- 8 large eggs
- 1 cup cottage cheese
- ½ cup shredded sharp cheddar cheese
- 2 tbsp finely diced bell pepper
- 1 scallion, finely chopped
- 1 to 2 tsp cooking oil, for greasing the pan
- 1 to 1½ tsp Cool Runnings all purpose seasoning
- ¼ tsp Cool Runnings dried thyme
- Pinch of black pepper
Directions
1. Lightly grease a silicone muffin pan with cooking oil and preheat the oven to 350°F.
2. Add eggs, cottage cheese, cheddar cheese, all purpose seasoning, black pepper, and thyme to a blender. Blend until smooth.
3. Pour the egg mixture into the muffin cups, filling each about halfway.
4. Evenly sprinkle the diced bell peppers and scallions into each cup.
5. Bake for 20 to 22 minutes until the egg bites are set and slightly firm in the center.
6. Remove from the oven and allow to cool for a few minutes before removing from the pan. Serve warm and enjoy!
