Jerk Salmon and Roasted Veggies

  • 4 salmon fillets
  • 2 tablespoons Cool Runnings Jerk Seasoning Spice
  • 2 tablespoons olive oil
  • 4 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes, red onion, etc.)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

    1. Preheat your grill or oven to 400°F (200°C).

    2. In a bowl, mix Cool Runnings Jerk Seasoning, olive oil, salt, and pepper.

    3. Coat the salmon fillets with the jerk seasoning mixture.

    4. Grill or bake the salmon for about 15-20 minutes or until it flakes easily with a fork.

    5. While the salmon is cooking, toss the mixed vegetables with olive oil, salt, and pepper.

    6. Spread the seasoned vegetables on a baking sheet and roast in the same preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized.

    7. Serve the Jerk Salmon with Roasted Veggies together for a simple and flavorful meal. Enjoy!
