Ingredients
- 4 salmon fillets
- 1 cup Cool Runnings Jerk seasoning mild
- 2 cups broccoli florets
- 3 large carrots, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions
1. Preheat your oven to 400°F (200°C).
2. Place the salmon fillets in a shallow dish or zip-lock bag, pour the pre-made jerk marinade over them, ensuring each fillet is well-coated. Let them marinate for at least 15-30 minutes.
3. In a large bowl, toss the broccoli florets and sliced carrots with olive oil, salt, and pepper.
4. Arrange the marinated salmon fillets on a large baking sheet, spreading the veggies around the salmon.
5. Bake in the preheated oven for 15-20 minutes, until the salmon is cooked through and flakes easily with a fork, and the veggies are tender and slightly charred.
6. Plate the jerk salmon with the roasted veggies. Garnish with additional lime wedges and fresh cilantro if desired. Serve and enjoy!
