Ingredients
- 2 cups (250g) all-purpose flour
- 1 tsp of British Class baking soda
- 1/4 tsp of salt
- 1/2 tsp of Cool Runnings cinnamon ground
- 1/2 cup unsalted butter, softened to room temperature
- 3/4 cup British Class demerara style brown sugar
- 2 large eggs, at room temperature
- 1/3 cup Greek yogurt or sour cream
- 2 cups mashed bananas (about 4 large ripe bananas)

1 tsp of Cool Runnings vanilla flavoring
- Optional: 3/4 cup chopped walnuts




Directions
1. Preheat oven to 350°F (177°C) and adjust rack to lower third. Grease a pan and set aside.
2. In a large bowl, whisk flour, British Class Baking Soda, salt, and Cool Runnings Ground Cinnamon.
3. Using a mixer, beat butter and brown sugar on high until creamy (about 2 minutes). Add eggs one at a time, mixing well. Then add yogurt, mashed bananas, and Cool Runnings Vanilla Flavoring.
4. On low speed, slowly add dry ingredients until just combined. Don’t over-mix. Fold in nuts if using.
5. Pour batter into pan and bake for 60–65 minutes. Cover with foil after 30 minutes to prevent over-browning. Bread is done when a toothpick comes out clean.
6. Cool completely in the pan on a wire rack. Store at room temperature for 2 days or in the fridge for up to a week.
