Cajun Shrimp Salad

Ingredients

Directions
1. Toss shrimp with 1 tsp Cajun seasoning and 1 tbsp olive oil until evenly coated.

2. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and cooked through. Set aside to cool.

3. In the same pan, add the drained canned corn and cook for 2–3 minutes until lightly toasted for extra flavour. Remove from heat.

4. In a large bowl, combine corn, cherry tomatoes, cucumber, red onion, and parsley.

5. In a small bowl, whisk together remaining 1 tbsp olive oil, lime juice, remaining 1 tsp Cajun seasoning, All Natural All Purpose Seasoning, Garlic, Pepper & Herbs, honey (if using), salt, and pepper.

6. Add cooked shrimp and dressing to the salad. Toss gently to combine.

7. Serve over mixed greens and enjoy immediately, or chill for 15 minutes before serving.
