Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp oil (coconut or vegetable)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Cool Runnings All-Purpose Seasoning (No MSG)
- 1 tbsp Cool Runnings Jamaican Style Curry Powder
- 1/2 tsp turmeric
- 1 (14 oz) can Cool Runnings Coconut Milk
- 1/2 cup diced tomatoes (adds richness)
- 1/2 cup bell peppers, sliced (adds sweetness)
- 1 tbsp lime juice
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- Fresh cilantro or parsley for garnish
Directions
1. Heat oil in a large pan over medium heat. Add onions and cook until softened, about 2 minutes. Stir in garlic and cook for another 30 seconds until fragrant.
2. Add Cool Runnings Curry Powder, turmeric, and a pinch of salt, stirring for 1 minute to toast the spices and release their aroma.
3. Add chicken pieces and season with Cool Runnings All-Purpose Seasoning and black pepper. Sear for 3-4 minutes until lightly browned but not fully cooked.
4. Pour in coconut milk, diced tomatoes, and bell peppers. Stir to combine.
5. Bring to a simmer, reduce heat, and let cook uncovered for 15-20 minutes until the chicken is tender and the sauce thickens.
6. Stir in lime juice and adjust seasoning if needed.
7. Garnish with fresh cilantro or parsley and serve with coconut rice or jasmine rice for the best flavor pairing.
