Ingredients
- 2 whole red snapper, cleaned
- 1 lime (for cleaning)
- 1 tablespoon Cool Runnings all purpose seasoning
- 1 teaspoon Cool Runnings fish seasoning
- 1 teaspoon Cool Runnings black pepper
- 1 teaspoon Cool Runnings thyme leaves
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 scotch bonnet pepper, chopped (optional for heat)
- 2 cups fresh okra, trimmed
- 1 tomato, chopped
- 2 scallions, chopped
- 1 tablespoon butter
- 1 cup Cool Runnings coconut milk
- 1 1/2 cups water
- Salt to taste
Directions
1. Clean the fish with lime juice and rinse.
2. Season the fish with Cool Runnings all-purpose seasoning, fish seasoning, black pepper, and thyme.
3. In a large pan, melt the butter over medium heat. Sauté the garlic, onion, bell pepper, scotch bonnet, and scallion.
4. Add the tomato, okra, coconut milk, and water. Bring to a simmer.
5. Place the fish into the pan, spooning some of the liquid over it. Cover and cook for 15-20 minutes until the fish and okra are tender.
6. Serve hot and enjoy!
