Ingredients
- 1 can Cool Runnings corned beef
- 1 medium cabbage, chopped
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 scotch bonnet pepper (optional, for heat), finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Cool Runnings all natural all purpose seasoning
- 1 teaspoon Cool Runnings thyme leaves
- 1/2 teaspoon Cool Runnings black pepper ground
- 2 tablespoons oil
- Salt to taste
Directions
1. Heat oil in a large pan over medium heat. Sauté the onion, garlic, bell pepper, and scotch bonnet pepper (if using) until softened.
2. Stir in the chopped cabbage, seasoning with Cool Runnings all-purpose seasoning, thyme, black pepper, and a pinch of salt.
3. Cover and cook on low heat until the cabbage is tender but still has a bit of crunch, stirring occasionally.
4. Break up the corned beef and mix it into the cabbage mixture. Cook until the corned beef is fully heated and well combined.
5. Adjust seasoning as needed and serve hot with rice.
