Spinach and Artichoke Dip

Yields: 8 Servings | Preparation time: 15 minutes | Cooking time: 25 minutes

Ingredients
  • 1 (10 oz) package frozen chopped spinach, thawed, drained, and squeezed dry
  • 1 (14 oz) can artichoke hearts, drained and finely chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese (reserve 1/4 cup for topping)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Cool Runnings garlic, pepper & herbs seasoning
  • 1/2 tsp Cool Runnings Scotch Bonnet pepper sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 tbsp olive oil

Directions
1. Preheat oven to 375°F (190°C) and grease an 8x8-inch baking dish with olive oil.

2. In a large bowl, combine cream cheese, sour cream, mozzarella (reserving 1/4 cup), and Parmesan until smooth.

3. Stir in spinach, artichokes, minced garlic, Cool Runnings Garlic & Herb seasoning, Scotch Bonnet seasoning, black pepper, and salt. Taste and adjust seasoning if needed.

4. Transfer mixture to the prepared baking dish and spread evenly.

5. Sprinkle the reserved mozzarella cheese evenly on top.

6. Bake for 20-25 minutes until bubbly and golden on top.

7. Let cool slightly before serving with chips, toasted bread, or plantain chips for a tropical touch.
