Ingredients
- 8 1-inch-thick bone-in pork chops (about 3 pounds total)
- 2 cloves garlic, pressed
- 1 cup ketchup
- 3/4 cup bourbon (like Jack Daniel’s)
- 1/4 cup molasses
- 1/4 cupcider vinegar
- 2 tbsp British Class dark brown sugar
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tbsp of Cool Runnings chili powder
- 1/4 tsp of Cool Runnings cayenne pepper
- 1 tsp Worcestershire sauce
- Salt and pepper to taste



Directions
1. In a medium saucepan, heat the oil over medium heat. Add the garlic and cook, stirring occasionally, until it starts to sizzle—be careful not to let it brown.
2. Stir in the chili powder and cayenne pepper and cook for 1 minute until fragrant.
3. Add the ketchup, bourbon, molasses, vinegar, brown sugar, Dijon mustard, and Worcestershire sauce. Stir well to combine
4. Bring the mixture to a simmer and cook for 12–15 minutes, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper to taste. Set aside.
5. Preheat the grill to medium-high heat. Season the pork chops on both sides with salt and pepper.
6. Grill the pork chops for 10–14 minutes, turning once, until a thermometer inserted into the thickest part reads 135°F.
7. During the last 4 minutes of grilling, baste the pork chops with about ⅔ cup of the prepared BBQ sauce. Once done, transfer the chops to a plate and baste again with a little more sauce.
8. Serve with the remaining BBQ glaze on the side.
